Loaded up on seasonal fruit and wanted to make a light alternative to cake. The pastry cream in this tart was made with skim milk, which made it light and airy. The handmade crust was perfect!

COCONUT-POMEGRANATE POUND CAKE
My family has a secret recipe for coconut pound cake. My friends know this cake very well and it's commonly requested for birthdays and the like. My friend Rachel asked for a different twist on her usual order.
CHAI CAKE
Chai tea is my favorite - I won't drink anything else. I made a chai-soaked spice cake one day to experiment. It was delicious!
OPERA CAKE
Birthday cake for a friend of mine who sings opera. Almond sponge cake soaked with a coffee syrup, layered with espresso buttercream and chocolate ganache.
WINTER SPICE CAKE
Got locked in my house for 2 days.... this was the result. Spice cake layered with fig preserves and a honey-nutmeg cream cheese frosting

Birthday cake for my mother. She wanted "death by chocolate".... so I gave it to her. Dark chocolate cake with chocolate frosting, pirouette cookies, and fresh berries!!!
